Orange Cranberry Almond Muffins
These quick and simple muffins are an easy way to get your protein and vitamin C. One muffin contains only 219 calories, has 5 grams of protein, 4 grams of fat & 4 grams of fiber! If you want to add more protein and fiber chop up your favorite nuts to add:) Perfect for in-between meals or a night-time snack to de-stress. Enjoy and here's to Muffin' but health and wellness:)
Ingredients | Quantity | Instructions |
---|---|---|
Almond Flour | 3 cups | Preheat oven 375º |
Coconut Sugar | 1/2 cup | Put 12 muffin cups int your muffin pan. |
Baking Soda | 1/2 tsp | In a large bowl, whisk together almond flour, coconut sugar, baking soda & salt. |
Salt | 1/4 tsp | Stir in dried cranberries and orange zest. |
Dried Cranberries | 1/2 cup | In a small bowl, whisk together eggs, butter and orange juice. |
Orange Zest | 2 large oranges | Add to dry ingredients |
Eggs | 3 | Stir to combine. |
Unsalted Butter (melted) | 3 Tbsp | Use a scoop to distribute batter evenly among muffin cups. |
Fresh Orange Juice | 1/3 cup | Bake ~18 minutes or until golden and firm to touch. |
