Grainy Mustard Loaded Potato Salad
Complement your Memorial Day cookout with this easy and flavorful potato salad!
| Ingredients | Quantity | Directions |
|---|---|---|
| Sweet or Russet Potato (chopped) | 6-8 | Cook potatoes in boiling water until tender (~15 min) |
| Bacon (cooked, chopped) | 1/2 cup (4-6 slices) | Drain water & let potatoes cool |
| Red Onion (diced) | 1 | In a bowl, combine mustard, lemon juice, ACV, EVOO, salt and pepper |
| Fresh Chives (minced) | 1 tbsp | In separate bowl, add potatoes (diced), bacon, onion, and herbs |
| Fresh Parsley (minced) | 3 tbsp | Drizzle mustard mixture on top of potato salad, toss until well coated |
| Grainy or Old Style Mustard | 1/4 cup | Refrigerate |
| Fresh Lemon Juice | 1 tbsp | Enjoy! |
| Extra Virgin Olive Oil | 1/4 cup | |
| Apple Cider Vinegar | 1 tbsp | |
| Salt & Pepper | to taste |
